Colorful recipe of Achards de Légumes (Pickled vegetables)

This mixture of vegetables cut into strips is served as an appetizer or simply with bread.

Beware of the taste buds, this recipe is rather spicy!

Preparation: 60 mn

Cooking time: 10 minutes


Ingredients of pickled vegetables:


-2 big carrots

-500 g green beans

-1/2 small cabbage

-1/2 cauliflower

-1 medium cucumber

-2 small onions

-3 cloves of garlic

-1 large piece of ginger

-salt, chilli according to taste

-1/2 teaspoon turmeric

-1 tablespoon vinegar or lemon juice

-oil

-Steps of pickled vegetables:

-The pickles are cooked in a pan, they keep well for a few days and accompany any dish that is not served as input. Chili is optional.


To chop in julienne (in long sticks) carrots, green beans, cabbage and cucumber.

Cut cauliflower into small bunches or large thin strips.

mince the onions.

Stir together garlic, salt, ginger and chilli.

Heat in a frying pan half a tablespoon of oil and fry the vegetables until they are ready.

Do not let them soften too much: they will continue to cook with their heat.

Pour the vegetables in a large bowl as you go.

Heat a tablespoon of oil.

Brown the onions for 1 minute.

Add the crushed mixture while stirring constantly.

Add turmeric.

Mix well, pour over vegetables.

Mix well by adding the vinegar, it's ready.

Pour the vegetables in a large bowl as you go.

Add the tomatoes cut into small pieces

Cover and cook slowly 15 to 20 minutes
